Waffle Muffins

“What are waffle muffins?” you ask. Well, they are just what you might think, muffins cooked in a waffle maker.

One of my daughter’s favorite activities is helping me bake. Since she could sit up in her Bumbo, she has been on the counter next to me when I bake. Recently she has been able to actually measure out some of the ingredients herself and add them to the bowl.

Her all time favorite item that she requests we make is my “meal in a muffin” muffins. I usually bake these in muffin cups and she adds some decorative sprinkles, but the other morning she was extremely hungry and wanted them right away, so I decided to pull out my waffle maker and cook some up quick. I was surprised how good they were. All crispy on the outside and soft and tender in the middle. Here is my recipe, but feel free to try this idea with the muffin recipe of your choice.

Meal-in-a-Muffin Recipe:

1/2 cup mashed banana (about one medium banana)
1/3 cup finely grated zucchini
1/3 cup finely grated carrot
1/3 cup thick grated apple
2 eggs
1/2 cup sugar
1/2 cup olive or grape-seed oil
1/4 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp baking soda
1 1/2 tsp baking powder
1 1/2 cups whole wheat flour
1/2 cup quick cooking oats
2 tbsp. ground flaxseed

Mix all the ingredients together and pour 1/2 cup at a time into a greased (i used pam) waffle maker until the waffle maker lifts easily and the waffle muffin is golden brown. Dust on some powdered sugar and chopped walnuts. Enjoy!
