Just look at that perfect pink color from the dragon fruit. If these popsicle photos don’t make you crave one right now, I am not sure if we can still be friends. Follow along for the recipe.
Dragon Fruit, Pineapple, and Mango Margarita Popsicles:
- 2 ounces tequilla
- Splash of orange liqour
- 1 cup frozen dragon fruit chunks (or fresh if you can find it)
- 1/2 cup pineapple juice
- Juice of two limes
- Half a mango for the margarita, the other half for the bottom of the popsicle cubed
- 2 TBSP simple syrup (equal parts sugar and water heated until the sugar dissolves)
Begin by blending all of the ingredients above except for half of the mango. When smooth, pour into your popsicle molds 3/4 of the way up. Freeze for 30 minutes. Now blend the other half of the mango with another Tbsp of simple syrup and a splash of pineapple juice if needed. Remove the popsicles from the freezer, top with the mango mixture, and add your popsicle sticks. Return to the freezer for another 2-3 hours until frozen firm.
Now it’s time to invite over a few friends for the best frozen tropical margarita ever! Not a drinker? Simply omit the alcohol for a kid friendly tropical treat.
By the way, these also taste good as just a regular old margarita on the rocks. So if you don’t have a popsicle mold, just serve them as is!
