Bake It – Pumpkin Butterscotch Donuts

It’s starting to feel like fall is on it’s way here in Austin. The funny thing is that actually just means that the highs are in the mid to upper 80’s. But when it comes after 100+ degree days, upper 80’s feels like fall to us! The fact that I can sit outside and not end up a sweaty mess has plunged me into those fall feelings. And with that always comes baking! So last weekend I whipped up these oh so tasty pumpkin butterscotch donuts to welcome the cooler temperatures.

Talk about yum! These baked morsels go perfectly with a hot PSL, but I have really been enjoying them with a chai latte. However you eat yours, they come together quickly and are oh so good!


Pumpkin Butterscotch Donuts

  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/3 cup water
  • 1/2 can pumpkin puree (about 8 ounces)
  • 1/2 bag butterscotch morsels (about 1 cup)
For the glaze
  • remaining butterscotch morsels
  • 2-3 tbsp of milk to form thick glaze
Begin by mixing the sugar, oil, and eggs in a mixer with your paddle attachment. In a separate bowl add your flour, baking soda, salt, cinnamon, and nutmeg. Alternate adding a cup of the flour mixture and a few tablespoons of the water mixing well between each addition. Repeat until you have added in all the water and flour mixture. Then mix in your pumpkin puree until well combined. Finally stir in the butterscotch morsels. 
Spoon the batter into a sprayed donut pan and bake at 350F for 10 minutes or until the tops are firm to the touch and the edges are just slightly golden brown. Remove from the oven and repeat with the rest of the batter. 
Once cool, melt the remaining butterscotch morsels with the milk and stir to create a thick glaze. Dip the donuts in the bowl of glaze and place on a piece of parchment. Sprinkle with a bit of cinnamon and your donuts are ready to devour!
