Watermelon Margarita Kind Of Day…

The weather here in Austin finally cleared up from our late season cold snap (40 °F) and super rain spell. And it feels amazing outside. I must say the gloomy rainy weather really dampens my mood and I love me a nice sunny day. To make the day even better I used my leftover watermelon chunks that I had frozen a few days ago to make a refreshing watermelon margarita that I enjoyed as I sat outside in my ever evolving garden. Here is the recipe so that you too may enjoy this refreshing summer treat as the warm weather approaches.

A day in advance (at the least) cube up some seedless watermelon and freeze on a tray or plate in the freezer. Once mine was frozen I transferred it into a plastic freezer bag to use as I need it. You will need about 6-7 cups of watermelon for this recipe. You will also need one can of Minute Maid frozen limeade and appx. 9 ounces of tequila of your choice.

Mix the whole can of frozen limeade mix (12 ounces), 9 ounces of tequila, and fill the rest of the blender up with the frozen watermelon chunks. Blend until it is lump free and enjoy in a sugar or salt rimmed glass as you please. It is such a cool summery drink I am sure you will love it as much as I do!
