Tonight for dinner I made a healthy Mexican salad with ranch dressing. I am sure that it would have been much better with some creamy jalapeño ranch dressing, but I was too lazy to make that, so I just went with the bottled stuff I had in the fridge. Come to think of it a cilantro lime vinaigrette would be yummy too.
Anyway, to make the salad I first cooked ground turkey with chopped onions, green bell peppers, and tomatoes and seasoned it with ground cumin, chili powder, salt, pepper, and garlic powder. Then I topped some fresh salad greens with black beans, the ground turkey, pieces of Colby jack cheese, avocado, tomatoes, and crunchy corn tortilla strips that I fried up.
Funny enough, I made Madeline a taco with the turkey, beans, and avocado, but when she saw my salad, she said “I want a plate like that!” and proceeded to eat the salad off my plate. I am so glad she is a good eater.
