I am back from the SNAP conference and I am so excited and motivated to start implementing all the new things I learned. In addition to learning a ton about blogging and meeting so many creative ladies, SNAP was full of sugar. From the Swig cookies and soda station to the Lindt Chocolate lounge full of the best chocolate and truffles, sugar was not in a limited supply! Inspired by all the colors and treats from this weekend, I quickly whipped up this easy pastel chocolate chip cookie recipe and want to share this colorful twist on traditional chocolate chip cookies with you today.

Easy Pastel Chocolate Chip Cookies for Mother's Day or Spring Brunch

Don’t get me wrong, I love regular old chocolate chip cookies as much as the next guy, but sometimes you need a little more color in your sweets. Or is that just me? And seriously how perfect are these for spring? They would also make a lovely little gift for Mother’s Day! Especially if you packed them up in this cute gold and glass cookie jar from Target.

The cookie recipe I used is my go to chocolate chip cookie recipe that yields the most soft and chewy cookies and I simply just swapped traditional chocolate chips for chopped up colorful candy melts. Easy peasy.

Easy Pastel Chocolate Chip Cookies for Mother's Day or Spring Brunch

Pastel Chocolate Chip Cookies

1 cup sugar
1/2 cup light brown sugar
1 egg
2 tsp vanilla
2 Tbsp. light corn syrup
1/2 tsp. baking powder
1 tsp baking soda
2 3/4 cup all purpose flour 
2 cups of chopped colorful candy melts

Mix up your dough and colorful chocolate candy melts, scoop on your baking sheet and bake for appx. 10 minutes at 350°F. You will want to remove the cookies when they look a little under-cooked and are just starting to turn golden brown. This will make sure you get the most chewy and soft cookie. Then simply let cool slightly and serve.
