I am so excited to finally share this colorful and bubbly brunch with you today! I love a good brunch, and when Pocky reached out about throwing a colorful brunch party, you know I was on board. Their crunchy chocolate and flavor coated biscuit sticks are tasty and the perfect brunch snack. To go along with them I brought out all the best colorful party decor, DIY’ed a few colorful ball top juice carafes, and came up with a recipe for a strawberry pocky waffle cake to top all other brunch foods! So follow along as I share all the details on how to throw the ultimate colorful brunch!

First up, let’s talk about these super cute colorful ball top carafes. I have seen similar walnut stained wood ball top decanters that are going for anywhere from $29-$39, but of course I needed some with a little more color and a cheaper price, so I figured out how to make them!

To begin you will want to purchase decanter shaped glasses (I found mine at the craft store in the glass vase aisle, but you can also find them here). Once you have your glass, you will want to measure the diameter across the top opening and then you will need raw craft wood balls that are this same diameter. For example, my decanter glasses were 3″ in diameter across the top, so I got 3″ in diameter wood balls. If yours only measures 2″, then get 2″ wood balls. The last supply is non toxic food safe paint like these.

All there is to do then is to use the paint to paint the wood balls with 1-2 coats of paint. Once dry, add them to your carafes with fresh juice or flavored Italian sodas (to play up that bubbly theme) and your drinks for brunch are ready and oh so cute!

Now that the drinks are taken care of, let’s talk about the colorful waffle cake! Using a waffle maker is by far one of the easiest ways to make a cake. This whole cake came together from start to finish in about 30 minutes!
Rainbow Waffle Cake Recipe:
  • 3 cups all purpose flour
  • 3 tablespoons baking powder
  • 3 tsp salt
  • 3 tablespoons sugar
  • 3 tablespoons vegetable oil
  • 3 cups milk
  • 3 eggs
  • food coloring
  • cream cheese icing (store bought or homemade)
  • Colorful DIY sprinkles and pocky sticks
See how easy that recipe is?!
Begin by mixing the dry ingredients together and then add in your oil, eggs, and milk. Once mixed, scoop out one cup of batter into a separate bowl and add the first food coloring. Mix well and then make your waffle in your waffle maker. Once cooked, remove the waffle and add another cup of batter to the bowl. Add your second food color and then cook the second waffle. Repeat until you have a rainbow of waffles and all the batter is gone.
To assemble the cake, start with one waffle, then add on a layer of cream cheese frosting and crushed pocky sticks.
Continue adding a waffle, then frosting, then more pocky sticks until you reach the top of the cake.
Once you reach the top, add one more layer of frosting, then add your pocky sticks to the top and a few large chunks of DIY confetti sprinkle and your done!
Now if that is not the ultimate rainbow brunch cake, I don’t know what is!
To go along with the cake I also made a trio of colorful fresh fruit syrups! For these just blend equal parts corn syrup and fresh fruit like pineapple, strawberries, cantaloupe, kiwi, etc. until well combined. Then pour into condiment bottles. The sugary and fruity syrup paired so well with the cream cheese waffles and fruity flavored pocky sticks!
Now for the decorations! To play up the colorful and bubbly aspect of the brunch, I created a simple balloon arch to fill the ceiling. Using only packing tape, I taped various sized balloons to each other and then used a few push pins to adhere the balloon arch to the wall.

For the table I added a few carved out pineapple vases filled with flowers for that colorful summer vibe, and the final touch were a few of my abstract art plates and gold plastic forks.

Now that you have seen all the details and have the recipe for your own colorful waffle cake, tell me what your favorite part of this brunch is! I would tell you mine, but I am honestly having a hard time deciding between the cake, the balloons and the colorful ball carafes!
