Cook It – Easy Breaded Pasta with Grilled Chicken

In this house we LOVE pasta. It is a staple meal that we eat at least once or twice a week. I especially love La Moderna pasta because it is not only tasty, it has a high protein content which is great for picky eaters. It’s available at select Walmart locations and it is our new go to pasta. Now, I can’t really remember when I developed this pasta recipe, but I believe it was when we were low on groceries and it was one of those “what’s left in my pantry that I can put together for a passable meal” type situations. Since then it has become one of my husbands favorite meals and even my picky 3 year old will eat it. So I consider that a win!

So, you may be asking yourself, “What is breaded pasta?”. Well, it is exactly what it sounds like. Al dente pasta tossed in garlic butter, Parmesan cheese, and Italian seasoned bread crumbs then plated on top of a bed of warm marinara sauce and served with grilled chicken. It’s an easy pasta recipe that can be thrown together last minute with only a few ingredients.

As you can see, this recipe can easily be made by pantry staples like La Moderna pasta, bread crumbs, Parmesan cheese, and a jar of marinara sauce. Follow along for the full recipe.

Easy Breaded Pasta with Grilled Chicken
For the Pasta:
  • 1 Box La Moderna Penne Pasta (available at select Walmart locations)
  • Jar of your favorite marinara sauce
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup Italian season bread crumbs
  • 1/2 TBSP chopped fresh parsley
  • 2 TBSP Salted butter
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh pepper
  • 1/2 tsp garlic powder (not garlic salt)

For the Grilled Chicken:

  • Tenderized flattened chicken breasts
  • olive oil
  • salt
  • pepper
  • fresh parsley

Boil the pasta in salted water until al dente, drain and toss to coat with the butter. Then add in the salt, pepper, garlic powder, parsley, breadcrumbs, and Parmesan cheese.

 For the chicken, drizzle them with olive oil, then sprinkle on salt, pepper, and parsley. Grill until the juices run clear and there is no pink in the middle.

 To serve, smear a 1/4 of a cup of the marinara on the plate, top with the pasta, and then the sliced chicken breast. 
The beauty of this dish is that you get just a bit of sauce with each bite and it doesn’t overpower the pasta. Letting the flavor of those golden harvest grains shine through. And as you eat the bread crumbs mix with the marinara making a thick flavorful sauce.

    The recipe calls for marinara sauce but in the instructions you mention plain tomato sauce which isn't included in the recipe ingredients. So which do you use/recommend?

    Sorry I used the terms interchangeably. I just update the post to have the same term throughout. Any jar of marinara/spaghetti sauce that you like will work.
