I started off with Blue Curacao, pineapple juice, and a pitaya simple syrup mixed with rum. The first two are self explanatory, but for the pitaya simple syrup I used the following recipe:
- 1 cup frozen pink pitaya
- 1/2 cup water
- 1/2 cup sugar
I placed all the ingredients in a sauce pan and cooked until the sugar dissolved. Then I blended the ingredients and strained out the black pitaya seeds. I mixed this tropical simple syrup with equal parts of rum (coconut or plain white rum will totally work) to create the magenta color you see above.
That’s it! Set these out and let your guests mix and sip (responsibly, of course). Anyway you mix them, you’ll get a tasty tropical martini and a fun Halloween color!
Now that is one fun way to make a drink! And how awesome is that black color?!
