Tonight for dinner I made some yummy turkey meatloaf loaded with zucchini and carrots with sweet potato fries and a salad with colorful tomatoes. The meatloaf was super tasty and better than the taste was the fact that it was loaded with veggies.
To make the meatloaf I used about a pound of ground 93/7 turkey and mixed into it 1/2 onion and 4-5 cloves of garlic that I chopped finely in my food processor. Then I added 1 medium sized, finely grated zucchini and 2 medium finely grated carrots and mixed it all together with some Italian seasoned breadcrumbs, a couple tablespoons of tomato sauce (I used veggie loaded Prego), and salt and pepper to taste. Next I formed it into a loaf shape on a lined sheet pan and baked it at 400°F until the internal temperature was 180°F. The last 10 minutes of baking I poured some of the remaining Prego over the top to let it get all nice and saucy.
