My nephew spent the night last night, so this morning I wanted to make a super fun breakfast for all the kids. Of course that meant some sort of pancake was in order. I decided to try to make some bunny pancakes that I saw on Pinterest, and then has the idea to try to make a bunny peeps pancake too.
I went with my go to pancake recipe, but tweaked it a bit to make it healthier and more Easterish. That meant adding carrots, banana, and coconut fur. The recipe I used is below.
Carrot Banana Pancakes
1/2 cup whole wheat flour
1/2 cup white flour
2 tsp baking powder
1/2 tsp salt
1 large carrot finely shredded
1 mashed banana
1 egg
1 cup whole milk
1 tbsp grape seed oil (or vegetable)
I used some left over vanilla icing to make the shredded coconut stick as well as for the fluffy tail. Then just add some banana slices and chocolate chips for the bottoms of the feet.
