Make It – Funfetti S’mores Cheese Ball

I know the term cheese ball doesn’t usually scream sweet dessert, but trust me that this funfetti s’mores cheese ball is all that and a bag of (chocolate) chips. When I originally thought of this concept, I was just thinking of a plain s’mores cheese ball with a graham cracker and cream cheese base. But after a bit of experimenting, I came up with the most delicious and colorful dessert due to the addition of marshmallow fluff and sprinkles. Because what looks better than a dessert covered in sprinkles?

Funfetti S’mores Cheese Ball

  • 1 Sleeve Graham Crackers
  • 1/2 cup marshmallow fluff
  • 2 ounces cream cheese
  • 1/2 cup mini marshmallows
  • 1/2 cup mini chocolate chips
  • Rainbow sprinkles
  • Extra mini chocolate chips and marshmallows for the outside
  • Extra graham crackers for dipping

 Begin by breaking up 1 sleeve of graham crackers in a food processor until they are crumbs. Pulse in the cream cheese and marshmallow fluff until a nice smooth mixture is formed. If your spread is too thin, simply add a few more graham crackers until you get a thick spread. Now add the mini marshmallows and mini chocolate chips and pulse until they are just incorporated.

Spread a piece of plastic wrap on the counter and sprinkle on the rainbow sprinkles, extra mini chocolate chips, and mini marshmallows. Remove the cheese ball mixture from the food processor, shape into a ball, and roll in the sprinkle/marshmallow/chocolate chips until it is covered. Wrap in the plastic wrap and refrigerate until firm. About 1-2 hours. When ready, remove from the fridge, unwrap and serve with more graham crackers.

Now that is one fun dessert! Most cheese ball recipes that I have seen use quite a bit of cream cheese for the base, but I wanted this to taste more like a chocolatey, marshmallowy, cookie butter base, hence the use of just a little cream cheese and a whole lot of marshmallow fluff!

This recipe is perfect for a party, or when you really want to enjoy the taste of S’mores but there is no camp fire in sight! Enjoy!
