California Dreaming Summer Cocktail

Guys! Summer is in full force and I am ready to start celebrating the season with all the frozen cocktails! I had the idea of creating this California dreaming summer cocktail after my trip there last month and seeing the gorgeous cotton candy sunsets. After a little experimenting, I was able to create the perfect dragon fruit and coconut cocktail that is both a treat for your eyes and tastebuds! If this isn’t summer in a glass, then I don’t know what is. And to top it off, I found the cutest pastel palm tree drink stirrers that make the cocktail absolutely perfect.

Who’s ready for a big frozen glass of California dreaming?

California Dreaming Cocktail (makes 3 cocktails):

  • 1/2 cup frozen dragon fruit plus two 1″ chunks (Pitaya)
  • 6 cups of ice
  • 1 ounce blue curracao
  • 3 ounces light rum
  • 6 ounces cream of coconut
  • Whipped cream in a piping bag or ziplock bag
  • Palm tree drink stirrers

Begin by mixing your base layer of cocktail. For this you will add 2 cups of ice, 1/2 cup dragon fruit, 1 ounce rum, and 2 ounces cream of coconut to a blender and mix until well combined. Then add in even amounts to each of three tall glasses. Then mix up the light pink layer by blending 2 cups of ice, 1 ounce light rum, the 2 chunks of dragon fruit, 2 ounces of cream of coconut. Add to your glasses and then it’s time for the final blue layer. Blend the remaining 2 cups of ice, 1 ounce blue curracao, 1 ounce rum, 2 ounces of cream of coconut and add on the top of the pink layer. For the finishing touch, use the ziplock bag of whipped cream to press into the glass along the edges and add whip cream cloud layers. Use the drink stirrer or spoon to lightly swirl the drink to blend the layers and then add two palm tree drink stirrers and serve. Cheers!
