I have a secret. Well, it’s not really that big of a secret if you know me. Tomorrow is my birthday! I’ll be 35! Wow! How did that happen?! To celebrate, I made a cake with DIY jumbo rainbow sprinkles as one does when they are nearing their mid 30’s. The sprinkles are so colorful and fun and over the top. Just the way I like it! And they are super simple to make, so if you need to do a little rainbow birthday celebrating too. Be sure to read on below to see how I made them.
Now, I could have piped these a little cleaner, but I was really just trying to use up the rest of some royal icing when I made these. But they looked so cute, I just had to make a cake to use them on. Poor me. Right?! Ha. You can never have too many sweets around.
To make your own, you will want to make up a batch of royal icing. I love this recipe. Then divide it into small bowls and color the colors of the rainbow with food coloring.
Next fill a few piping bags (or ziploc bags) with the icing and pipe rainbows onto a piece of parchment paper. I free handed mine (hence the unevenness), but you can also print out a rainbow arch template to put under your parchment to help make your rainbows more symetrical and similar.
Once your rainbows are piped, let them dry on the parchment paper for 1-2 days. When they are dry, they should peel off the parchment paper easily and you can just place them into the sides of an iced cake (store bought or homemade).
You can also use this same tutorial to make other shapes like flowers, spiders for Halloween, stars, or palm leaves. The possibilities are endless! And seriously who wouldn’t want a birthday cake covered with jumbo shaped sprinkles?!
