Happy Memorial Day! Are you headed out to celebrate? Maybe a BBQ or gathering with friends? Why not whip up some garlic dill sweet potatoes? This recipe is a great healthy alternative to regular spuds. But not only are they healthy, they are super delish.
Just look at them! I originally tasted these at my cousins house, and I just had to know how she made them. I am not a huge fan of sweet potatoes, namely because of the sweetness, but the dill, garlic, and a little heat make these irresistible to me.
To make your own, you will need the following (serves 2-4 people):
2 – 3 cloves of fresh garlic minced
1/4 tsp Tony Chachere’s original seasoning
2 tsp chopped fresh parsley
1 tsp dry or fresh dill
2 sweet potatoes chopped
olive oil to coat
I like to peel and sweet potato and dice it into approximately 3/4 to 1 inch long pieces like so.
Now toss the sweet potatoes with the dill, olive oil, and Tony Chachere’s and then spread them out on a baking sheet and roast them in the oven at 400F. After about 10-15 minutes of baking, take them out and add the garlic and parsley and toss. Let them finish in the oven until the sweet potatoes are soft. The timing will depend on the size of your cut potatoes. Once they are fork tender, remove and let cool and then gobble them up.
I love to eat these with gyro’s, rice, tatziki sauce or even a runny dill fried egg. Or even all those things together! Don’t forget to tell me what you think after you try them.
