There is so much talk about Galentine’s Day the last few years, so this year I went back to the queen and creator of Galentines, Leslie Knope, for a little inspiration. After rewatching the Galentine’s Day episode, I was inspired to put together a fun Galentine’s Day waffle brunch because “uteruses before duderusess”, “ovaries before brovaries”, and “waffles always come first”. So kick it breakfast style with your gal pals this Galentine’s Day and serve up waffle fluffer-nutters and maple syrup cocktails.

For the waffle fluffer-nutters, I sandwiched peanut butter and marshmallow fluff between two dulce de leche flavored pizzelles. These will need to be made right before your gathering as they tend to make the pizzelles soft after an hour or two. But they are so fun and tasty, The perfect little waffle treat to enjoy with the girls.

For the maple syrup cocktail:

-1 ounce dark rum
-2 ounces Irish cream
-1 tsp maple syrup
-2 ounces milk

Shake over ice and strain into a glass and garnish with a mini frozen waffle. It’s like an adult glass of milk! If milk isn’t your think, try swapping coconut milk for the milk for an added coconut kick.

Since this is a Galentine’s Day waffle brunch, you can really get into the theme as much or as little as you want, and serve more waffle themed foods like these chicken and waffle bites from Pizzazerie or this rainbow waffle cake. Or even make a waffle piñata filled with little treats like mini alcohol samplers, beauty products, etc. Because sometimes adults need a piñata too! Hahahaha!
